11 lb packer brisket cooked to 195 in only 7 hours. Smoker fluctuated between 235 and 275 because of inclimate weather. Mostly it was in the 245 to 255 range. I was planning 12 hours of cooking time. Is it possible that it cooked in such a short time?
 
I check mine often, mechanical ones can go bad at any time, stock ones on mass made pits are usually off.
 
It could be possible. Check your probe in boiling water to see if it is accurate. Should be close to 212*
 
It's possible. Check all of your therms just to be safe.

Every meat cooks at its own pace. Some fast and some very slow.....
 
Thermo are accurate. Brisket was perfect. I would put it up against any. Thanks guys.
 
I've always thought the same thing! Since I put the propane burner in the New Braunfels, my 11-12lbers are done in just over half the time in weight. About 5-7  hours. Checked my Maverick digital and same thing, dead on!! Guess, I just don't get to babysit the smoker as long as some. ENJOY!!!!
