Smoking Turkeys for work thanksgiving lunch

    Got up at 5am to prep the turks and fire up the smoker.  i'm cooking 2 turkeys for work's thanksgiving lunch today.  the lady who is setting it up bumped the eat time to 11:30 from noon...thanks lady!

    got these puppies de-giblited....that put these new fancy plastic "leg holders" in the dang thing and to hold the legs...said it was oven safe but i didnt trust that in the smoker so i pulled, tugged and cut till i got them off!

    injected with Tony Chacari's creole butter, normally i use cajun injectors creole butter but they didnt have any at publix.  coated with a thin coating of Smoke House Maple Rub from mcCormicks, and for the heck of it put half an apple in each.  laced up with floss and fired up the smoker while cooling down the breasts with ice bags.

    got the smoker  up to 230 and left vents wide open (hoping to get  near 300 degrees, slowly climbing and at 277 right now).  put the birds on at 6am, been there 45 mins so far.

    2 hours in....WSM is staying around 280-285...really surprised i couldn't get to 300 with vents wide open :/ gonna check the temp in a hour

    Good luck!  I'm trying to thaw a turkey for a smoke but turkeys don't thaw too well in a 35 degree fridge.

    You can speed that up by placing frozen turkey in cold water for several hours

    hey fellas! got home and passed out last night after running a few errands!

    Turkey's came out great! crisp on the outside and juicy on the inside.  Never got the smoker to 300, stick manly around 275-285...but only took 4 hours on the dot for 2 13lb turks!  i was really surprised.  since i finished early i tripled wrapped in foil in a pan and put in a cooler with towels on top and bottom.  drove into work and they sat in the cooler for another hour.  pulled them out and uncovered...still steaming!! was a great site!

    some people, including my vice president, were a little hesitant about them. one lady said "i dont eat anything 'smoked'".....i quickly put a piece of turkey in her hand and she tried it...just fast as she was to judge she shut up :)

    other people who were fans of last 3 years fried turkeys said i now have the job each year..haha.

    Doug, contratulations, those are a thing of beauty.  Great to know you still have the photos, because all the other evidence is GONE!  Outstanding job!!!
