Hey, new to this forum and website. I am a sound engineer by trade. Just trying my hand at smoking meat for the first time. I am way to pick about bbq. So I am going to try it myself. Just bought a old Hickory Pecos smoker and seasoned it today. It seems to run great. I had very little problem keeping it at temperature for a few hours. Beginning luck or a good smoker? I guess time will tell.
