A packer is a lot of meat, do folks cut it up and freeze some for future smokes or smoke it all and freeze the leftovers

I'd cook the lot and freeze it in sections. I have 2 packers in the freezer and intend to do that.

I typically smoke the whole thing as others have said then slice and vacuum pack in pre-portioned packages to freeze.  Some portioned for a meal for 2 and some portioned for a sammie for lunch.

I like to cut it up in sections depending on size, that gives' me the option to make Corn Beef,Pastrami

I do like Richie does.

Take the point for pastrami.

Cut the flat in half & use half for corned beef & smoke the other half as just brisket.
