Smoking a 7 LB Pork Shoulder. How long does the Stall last?

That's typical. If you want to speed it up, bump up the temperature or wrap it. If you wrap it in foil, you can put it in the oven.

Mine usually takes from 8 to 10 hours. I try to keep the smoker between 225 to 250. Near 225 is better.

When the meat reach 160F I wrap in foil and spray a generous amount of unsweeten apple juice and apple cider vinegar at a ratio of 4 to 1. I remove it from the smoker when it reach 190 and let it stan for an hour before processing it.

Hope this help

It's quite normal to stall at that temp & may stay there for hours.

Next time try smoking at 270-280, it will get done quicker & usually doesn't stall.

It still will be just as tender & juicy.
