Instead of cooking them by time, cook them to temp. 165° in the breast. 170° - 175° in the thigh. Do you have a digital multi probe thermometer? If not, check out InkBird on Amazon.

Keep in mind that poultry takes on smoke quickly so you don't want to over do it especially if you will be using one the more robust woods like hickory or mesquite.
In general, about two hours of smoke should be plenty since these birds are spatchcocked.
Of course, you can keep the smoke rolling during the entire cook if you prefer.
