Hi everyone from the Columbia Basin,WA, Just received a MES30 for Christmas, have a little chief, and a couple offset cheap smoker/grill. I enjoy smokin pork,beef, fish, cheese, and nuts. Lookin forward to learn about the MES and look forward to some tips and tricks. Thank you
