Looking for a semi sweet vinegar slaw dressing recipe.....HELP!!!

My brain kicked in once I found Al's recipe.
We for sure got it from the same lady, and now I remember how simple it was to make. The only thing I changed in the recipe is, I used 1/2 cup of buttermilk instead of mayo.
I'VE BEEN USING AL'S RECIPE SINCE THE FIRST TIME I TRIED IT OUT, BEST EVER! I REPLACE THE SUGAR WITH SPLENDA, WORKS JUST FINE.
 
This is mine:

Semi-sweet vinegar coleslaw dressing, I use a Vitamix

Ingredients

  • 120 ml apple cider vinegar
  • 60–90 g sugar
  • 50–60 ml neutral oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4–1/2 tsp garlic powder
  • 0.2–0.5 g soy lecithin
  • 1–3 drops hickory smoke flavor
  • 1 tsp Dijon mustard
Method (Vitamix)
  • add vinegar, sugar, salt, pepper, onion + garlic powder
  • add lecithin + optional mustard
  • blend briefly to dissolve
  • slowly add oil while blending
  • high speed 5–15 seconds until emulsified
  • add hickory at the end, pulse once
  • rest 30 min before use
Why the additions
  • hickory: adds BBQ smoke character in micro-doses
  • garlic/onion powder: stable savory base without fresh instability
  • soy lecithin: stabilizes oil-vinegar emulsion, improves texture
  • Vitamix: mechanically creates fine emulsion and creamier mouthfeel, reducing need for emulsifiers
Do you ever use the Vitamix to shred the ingredients? I don’t have a favorite, I do hand chopped, mandolin, store bought shreds, and sometimes the Vitamix shred. It’s super fine, take less time to meld, and is just texturally different. I usually use the KFC copycat recipe for the Vitamix slaw.
Edit: My vinegar slaw is literally just vinegar, oil and salt. (maybe a pinch of pepper)

I would if; had one, for now I either use the mandolin or the Cuisinart with the shredding blade. If I'm really feeling it I'll slice it super thin by hand, but that takes to long for the ammout I need this to me.

Thanks, Keith, I really like H.R. stuff, I buy his rubs in bulk.
I know that I have a big bag of his Garlic/ Jap. rub on hand.
I haven't decided 100% on which way I will go with the slaw, it all depends on how much time I have, and how I feel on Friday when I'm cooking everything up, for our 4th of July/ Mom's birthday pool party.
I'm gonna try this one this summer if not this weekend.

With the Vitamix, I only make sauces. You can’t use it to chop vegetables, dice them, slice them, and so on. It’s only for creating a wonderfully smooth, fine mixture, and that’s what I always use it for. But not for making coleslaw.
1) the Vitamix blender can chop. More specifically wet chop where you’re floating your veggies in water, at a lower speed. Picture attached ( not mine) and I’ve done it plenty of times. If you’re particular about perfect cuts, this may not be the method for you.
2) there’s a Vitamix food processor attachment does all the perfect slice and dice stuff too.

Mayo, Mom won't touch the stuff, I bet I can sub it out with a little buttermilk. If I can't find Al's recipe, I might mix up a batch with a little buttermilk. I have a feeling I'm gonna be creating a new concoction using idea's from several recipes. ( It's how I roll in the kitchen).

I'm the same way Dan and use his GJ as a base layer on almost everything!
Also love his Simply Citrus in my coleslaw.

I get really great B.M. locally, it's super thick, sound gross but it pours in clumps until you shake it up.
It's great for stuff like slaws and salad dressings.
