I normally use my Vortex for wings, but this weekend I tested em out on my "new" pellet smoker. It was very good & very tasty. I'm still getting used to the concept of using the smoke setting before actually turning the temp up, but the pellet smoker's ease of use means I can cook some meat more often.

Brined for 5 hours
Smoke setting for 1 hour
Cooked at 275F for 1.5 hours

Looks great! What kind of rub did you use?
It's a rub that my competition team makes. It's low salt, slightly sweet with a touch of heat at the end. Very good, if I do say so.

did you find the skip crispy?
Not as crispy as when I do them on the vortex. Running the smoker at 275F does prevent the skin from getting rubbery.

Great looking wings! Definitely nailed that cook! I gave up on the wings using anything except the Webber, but you have me thinking to try again. I’m thinking oven at 400 for 10-15 min May crisp the skin at the end!
