Was going to make a meatloaf Friday but things came up and I couldn't do it. So since I was smoking on Sunday I figured I may as well smoke the loaf. Buckle up. Here we go.

First we get a nice Vidalia onion.

Then some meat and seasonings. 1 1/2 pounds Ground Beef and 1/2 pound ground pork. I froze the other half of the pork for meatballs at a later date.

Finely chop the onion.

Fry them until soft in some EVOO and butter.

I know it's redundant but this pic came out really good. I love all the colors.
