I think it would work with the cooking oil spray to make a crust , where it is more dough it would take a little longer to bake . I have seen cookies in CI pans.
Now you got me thinking , corn or apple fritters . Ha ha endless. We are going to have to do some experiments . Ok i guess i will have to get the smoker going again . If you get to it before me let me know the verdict
As long as the longer process does not make them sag ( maybe chill first like the potatoes
