Thanks. I will order the hot.The original uses habanero for heat. The hot uses scotch bonnet. I prefer the hot. Wife has a sensitive stomach and prefers the original. The hots perfect flavor to me.

I usually put the meat in a big ziploc, pour in marinade and massage the bag ever so often. I usually go 6hr. Overnight is fine.Well that did not take long. My favorite jerk is pork tenderloin. Will see if can dig some out of freezer. I usual buy the Walkerswood marinde. I guess this paste you just rub on the meat and let sit over night?
