Love finding this cut on sale. Got a nice roll of it for $2.99 @ LB. and sectioned it into 3 roast. After injecting it with a Butter/Garlic sauce, applied some Onion Powder, Lemon Pepper, Garlic Salt and plenty of Coarse Black Pepper. Smoked till an internal of 135º, using Pecan and Cherry. Wrapped and let it rest for one hour.

Will vacuum seal some of it, the rest will get run thru the Au Jus and will be put on a roll along with melted cheese and onions.

do you know the final internal temp after the 1hour rest? maybe 145ish?

looks amazing just like your post over at FS in the oven!

 Doug I would guess somewhere in the 140's, lower end. I can't see a piece of meat at that low temp, gaining that many more degrees.

 And I sure can't remember any photos of mine at FS involving an oven. Your gonna have to show me that one.

When I pulled a Prime Rib at 137˚, it only coasted to 142˚.---About what Flash estimated.
