Messing around with a few different rubs for an upcoming comp. Been trying out on chickens because they are cheap.....and delicious lol.

I normally brine chicken before I smoke but tonight was kind of last minute so I didnt. These were fresh farm birds with no additives whatsoever. I think this makes a difference in final product big time. Not that I'm against birds that have additives. I rubbed these girls down with THE GOSPEL from Meat Church. I wanted to see what this rub tasted like. Placed them in the fridge for a couple hours then placed them on the smoker at 225° using hickory pellets. (I'm salivating just typing this).

I let em smoke at 225° until they reached 145° and sprayed with beer a couple times.

Once the IT hit 145° I bumped the smoker up to 285 and continued with the beer spray until IT hit 160°. Then I bumped to 300° for about 15 min to ensure crispy skin. Pulled at 165° IT and rested for 10 min.

And plated with some garlic herb roasted taters and mac n cheese.

This chicken was overflowing with juiciness and flavor even without brine. I highly recommend The Gospel. ENJOY!

Looks great. You sure they are not cornish hens? Looks small on that grate.
 
Damn those chickens look fantastic. I’m so jealous. We had some delicious burritos for dinner but I still feel jealous after seeing this post. Great job. Two thumbs up.
