Smoked Cheeseburger with Waffle Fries Poutine.
I started with 3 pieces of bacon chopped up in a cast iron pan. The bacon was cooked but not super crispy.
Pulled the bacon out of the pan and let it drain and cool on a paper towel.
Meanwhile in the bacon grease I cooked off a table spoon of minced garlic and about 1 1/2 tablespoons of minced shallots.
Those too were cooled and drained on a paper towel.
1 pound of 80/20 ground beef mixed with the shallots, garlic and bacon.
The mixture was divided in four with just my hand.
Using a hamburger press and a couple of pieces of wax paper to make two 1/2 pound patties.
Fired up the Pit Boss Copperhead 5 Vertical Smoker ... a photo of the oven thermometer that I run inside it to keep an eye on things.

Meanwhile.. two more slices of bacon chopped up and in the pan.. this time seasoned with extra black pepper.
Some cheese curds for the Poutine... bought not homemade.

When the burgers got to 140F IT one of them was ready for Chipotle Jack cheese!!
The burgers were cooked to 160F IT because it was store bought ground beef.. and no it wasn't anywhere near dry or over done.

I had the smoker set to 275 and the target was 160F for the burgers. The rest should be self explanatory!
I air fried the Waffle Fries at 400F for 15 minutes, added the bacon and the cheese curds for a minute or two to melt the cheese then topped with beef gravy and green onions.
The bottom burger bun had mayonnaise and shredded lettuce and I added some ketchup after I took the photo to the top bun.
