Other day i gave some smoked cheese to our friends from Alaska. They drive back home for the summer. They are going to bring me some Alaska vodka for the cheese. Little bit ago they brought over some halibut cheeks for us, said the cheeks are the best part.

Yep cheeks are great. Texture like scallops. Easy to overlook so be careful or they'll be rubbery.

We like them cooked simple. Butter, garlic a bit of salt and pepper. Good hotncast iron skillet.
