Harris-Teeter had leg quarters for .97 a pound this week. And the weather forecast for Sunday was perfect. Great day for a smoke.

Washed and dried the chicken. Removed what I think was the femoral artery. Wish I got a pic of it but my hands were pretty slimy at that point.

Got my ingredients together. Very simple recipe.

Rubbed the chicken with the dry ingredients.

Put them in a big stainless bowl.

And cover with a 1/2 gallon of buttermilk.

Cover and refrigerate overnight.

Be back later when we get fired up. Also doing meatloaf and ABTs today as well.

Sounds like the start of a great smoke and Q too. Buttermilk is my choice of brine for chicken.

Save the planet... it's the only one with Q.

One question: How long after seasoning, do you put them in buttermilk? I'm just thinking the buttermilk would remove the seasoning flavors.

I'm not big on fowl, but I could go for some of this in a hurry!

I have never marinated in buttermilk, well chicken that is.  When grilling blue fish I do.  I will have to give that a try.  Looks great
 
Looks real good . I like the Buttermilk idea. But I would be wanting to put me some corn bread in it....

Nice job, I love using buttermilk marinades. I usually just season the buttermilk.... lol. Now what was in the foil taco on the top rack?
 
I like that buttermilk thing. I've been eating the chicken and the meatloaf all week. Here are some leftovers for your viewing pleasure. Some good internal muscle fiber views. I steamed them for about 10 minutes on low steamage in my custom made steamer.

Here 's one without it's skin. I do low and slow so the skins like leather when I get done. But that's OK I'm fat enough.
