Smoked Bologna

    I am trying to improve on my last bologna smoke that I did over a year ago. lol

    This time I tried the bologna 3 different ways...
    I got the scoring idea from a talented smoker named Pork Smoker. His scored bologna looked much nicer than mine.
    First hunk is scored, rubbed with olive oil and sprinkled with peppered bacon salt....

    The second piece is butterflied, spread with a cream cheese, onion. garlic mixture, then topped with minced jalapenos and bacon....

    Then topped with pastrami slices...

    Rolled and wrapped with bacon...
    Smoked both with hickory.

    The third batch was cubed, seasoned with pepper, dipped in beer batter and panko, then fried...

    Served with jalapeno cheese, pineapple, cheddar, olives, strawberries and hot peppers...

    The rolled bologna....

    The beer batter/panko fried bologna with spicy brown mustard...

    It was all pretty tasty!

    I can't pick a favorite out of the three....

    Oh my gawd...those look fantastic!
    I'm gonna go with the rolled, but I'm sure they were all excellent!!

    I remember reading your previous bologna, but this one is over the top! Scored bologna...awesome. Rolled bologna fattie.....terrific. Fried bologna

    That last 5lb hunk of bologna was dubbed the bologna from hell. It lasted me forever. lol

    Jeanie, you don't need to improve on anything you make. Your Q is always delicious. As your "Official Taste Tester" I'm getting tired of cleaning the drool off my laptop. I am going to send you boxes with Fedex labels on them, this way all you have to do is smoke and send the sample LOL. Have you ever thought of sending your pics to food magazines? Your presentation is amazing, Didn't know Bologna could look that good.

    I've smoked bologna before but never anything even close to yours. Every one of them look tasty as hell.

    Nice job, Jeanie! Yum! All 3 look delicious. I've got a half of a bologna in the freezer I've been tryin' to decide what to do with it. I gotta try that butterflied and rolled deal.[​IMG]

    looks good Jeanie... i will have to try a bologna soon..only problem is i am the only one that eats
