The whole family was asking for smoked beef quesadillas so who were my wife and I to argue. I used a 3 lb top round we bought on clearance and rubbed it with a mix of salt, pepper, garlic powder, and cumin.
I put it on the WSM with apple chunks and one piece hickory and had it running around 275. I also threw on two thick pork chops on the bottom rack...the smoker was going, might as well put it to good use. Just over a hour and a half later, the beef was at 135, just how we all like it. A few minutes later the pork chops were done. They all rested until closer to dinner(the pork chops are for lunch today).
Closer to dinner, the top round was sliced up for the quesadillas. The whole family scarfed them down. Sorry, no quesadilla pics, but they were delicious!
