I have braised short ribs on the stovetop for many years and love them. I wanted to try smoking them and THEN braise them. I have seen some recipes that do this but have a question.

All the recipes have you put in smoker for a couple hours at around 225*. Then braise for a number of hours.

My question is do you think it viable to smoke (electric smoker) on a cold smoke only with amazen pellets for an hour then braise?

I just cooked some last night. 3 hrs of smoke at 225-ish then into a foil coverd pan with a little liquid, (water and beer) about 6 ozs total for 2 hours and then out of then pan for a hour. Was mighty tender and tasty.

Why not smoke on the grates for a period of time and then braise in a pan of liquid in the smoker?
I would smoke them for about three hours and then put them in a disposable pan with beef stock and braise them until probe tender.

Embarrassed to admit that never thought of braising IN the smoker. Am just so used to doing the braising inside.
Thanks, will give this a try.

Nothing to be embarrassed about. Have you ever smoked them to 205F without braising? They are tender and delicious too.

No reason to be embarrassed and there's no reason to braise them on the smoker unless you just want to do it. They will be wrapped so they won't be taking on anymore smoke. You can do that in the oven if you want to save the fuel on the smoker.
