Smoke an Egg Casserole?

Just tossing it out there...

So I'm tasked with making a "breakfast" themed dish for the missus' graveyard shift potluck tomorrow and am going to bake up an egg casserole for her to take.

And now that I'm addicted to smoking things - was wondering if using my Camp Chef pellet grill to cook it would bring a unique wonderful goodness to it - or just ruin it...

It's kind of a "Denver" style egg, 'shrooms, peppers, cheese kind of recipe - if that helps.
 
I think it's a good idea. A pellet grill doesn't overwhelm with smoke flavor. I'd smoke the veggies first till tender crisp. Maybe some Siracha in the egg mixture.

I figured I would prep the recipe like usual - saute the veggies in a pan w/ olive oil, etc. - then just cook the complete mixture on the grill instead of the oven - seems like a bit of smokiness wouldn't hurt - but don't want to overlook some bad reaction that might be lurking. Gotta send the hot sauce bottle on the side - my heat threshold can be too "aggressive" sometimes - her words, lol.
 
Sounds real good to me. Smoke blends good with eggs. Gives a great flavor to them. Just try doing deviled eggs one time. You'll never go back to the normal way. Especially if you get the yolks smokey them use them in the mixture.
Some addictions are a wonderful flavorful thing.

Go for it! I cannot see any downside to this. I've seen several YouTube videos lately on breakfast casseroles done on smokers. Pellet smokers are ideal!

Tried to keep it kinda light - can't have all the nurses falling asleep after too rich of a dinner!

Winner winner chicken dinner....

It was a hit - she says everyone had some and loved it - so that's cool. Smoke + Eggs = more gooder.
 
I'll give you points just for saying more gooder :)
Now this goes on my list of things to cook in my pellet cooking machine.
Pizza is high on the list as well......
Looks awesome. I don't think cooking with real wood is ever a bad thing?
