Smoke #3 on my Bayou Classic. Still ZERO complaints. Going to install a TEL-TRU 4" probe tomorrow. Smoked a pork loin roast and what the heck, my freezer was getting low on Boston Butt pulled pork so I threw one on as well. The BB is wrapped and still on the smoker. Pork loin roast is finished. Turned out good. 145 internal. Moist and tender with good flavor. Needless to say, the wife and I had a good supper tonight. Will vacuum seal the remainder and have sandwiches.
