Started out with a couple sirloins that I had aging for 3 days with salt.
Then added some course ground pepper.

Next I precooked some bacon to wrap around the shrimp.

I marinated the shrimp for 30 minutes with olive oil, salt, pepper, lemon juice. And a dash of Italian dressing.

All wrapped. And ready for the smoker.

I put the shrimp in the smoker for 15 minutes at 225 degrees. And finished on the grill. Then plated up with the steak and onion rings. The steak was excellent. And the shrimp had the perfect
amount of smoke on them.
