I’m thinking with the temperatures your wanting to go with a volume of a fridge you will be looking at 220 volts, much the same as your oven. I think most fridge builds are for fish, sausage where temperatures aren’t into your 400F range but rather in the 180-200F range or even less. Don’t know for sure just guessing.
