Short Ribs - Wilma!!!

Hey All,
Cook last weekend for my birthday. When this is what’s getting smoked up I’m hapoy to do it. My Wifey grabbed some shorties ftom Sam’s Club. Usually they have the 4 bone plates, these were the 3 which was great since there were 5 of us.
Simple trim. Scored the bottoms, SPG on one, the other Four Sixes whicjh is mostly SPG with a bit of chili pepper. Ran the pellet pooper at 265ish-thats where it settled - for 6 hrs. Only thing I didwas swap and rotate every hour-ish. At 6 hrs i almost pulled them then one spot probed non soft butter so another 45 min. Wrapped
and in the bbq bag for 2hrs, turned out great. Meanwhile I cooked up some greens and pork shots. My Wife poached up some Atlantic red crab claws and we feasted! Oh and my good buddy Chris brought over some nice Bourbon 🥃

Thanks! The weather forecast was spot on all week (amazingly) so I was ready for it. Stepson helped me set up the tent right before the rain, thankfully it wasn't windy.Great feast !

Nice looking plate ribs. The Caprese salad looks good to.

With the weather you had it is sure nice to have a smoker that runs on it's own. Could you imaging tending a firebox through all of that!

Thanks! The Atlantic red crab live deep - like 800-1000 feet deep. They brought in a whole truck from Maine at the local Elks club this winter. I normally avoid these types of sales but did a little research and this was legit. Not quite so good as your dungeness, more like a big blue crab. Mild, good texture and pre-scored which is nice 👍

Thanks! Yeah, tending a fire would have been less than ideal 🤪. I don’t think I even had the Caprese 🙁 my Wife does make it well 👍

Thanks! A few lightning bolts made me skeedaddle back into the garage! Sams, BJs Costco usually all have the ribs… but… you have to ask the butchers, they only put the flanken cut out but they have the whole plates in the back. They have always been happy to talk and help.
