Memorial Weekend Special - Beef Ribs

I hope everyone in the SMF community has had a good weekend! Always try to fire up at least one of the outdoor cookers on holidays. My wife scored these ribs a few weeks ago so they were the guest of honor for our holiday cook out.

5.5 lbs of what was labeled as "Tomahawk Beef Ribs". I gave 'em a quick rinse, pat dry, & remove that thick-ass membrane. Light coat of Avocado oil and a nice coat of Big Moe Cason's Beef rub. I just scored this rub a few days ago and was eager to give it a try.

I loaded the Yoder with LJ Apple Blend and broke out the signal thermometer again. 1 probe for cooking chamber & 1 for the ribs.

Ran the Yoder @ 230° for the first 5 hrs and then I bumped it down to 220° to finish it off.

8 hours in the Yoder without opening the door. It's beautiful and probe's like warm butter. It's ready!

Gave it 1 1/2 hr's of rest before carving. It turned out perfect!

Ya'll, the Big Moe Cason Beef Rub was really good on this beef rib. It has a lot of black pepper and we like Black pepper! Very balanced flavor profile and worked perfect with these Beef Ribs.
Sorry I didn't get a plated shot, I think I was too hungry or it might have been that 3rd shot of Traveller blended whiskey🥃😝!
This pared well with baked beans and mashed taters on a paper plate😋.

Wow those ribs look perfect Tex and I also like his rubs. I like that on steak!
And I can understand why no plated shot!
My family would have devoured that brisket on a stick before I could find my phone 😂

Thank you for the kind words and the likes. Re-heated and finished it off last night. I really enjoyed this beef rib. When I opened the foil from reheating I was hit with a beautiful aroma beef and smoke. Top self left-overs!
