Had a plate rib in the freeze I had gotten from Costco, decided to do some short rib sandwiches.
Made the braising liquid/jus with beef broth, red wine, tomato paste, garlic, onions, celery, carrot, thyme and Rosemary.
seared off 2 plate ribs in a Dutch oven and then added the jus after a good simmer. Into the oven at 300 for about 2.5 hours
Topped with gruyere on ciabatta and under the broiler. Fixings were pickled onion, pickled radish, horseradish spread and arugula. Yummy stuff.
