Kids couldn’t be here on Easter so did a prime rib today. Salted and put uncovered in fridge yesterday. Took it out today at 11:00 am and let it sit out till 1:00. Covered it with rosemary, thyme, garlic and blk pepper mixed in olive oil. Campchef xxl was holding steady @ 250, and in she went. Pulled it at 120 and let it sit on counter uncovered for 30 minutes. Put it in the oven at 500 for 12 minutes. That’s it. Should have had au jou and horseradish sauce but didn’t think about it.

That looks absolutely divine. Hope you had a great time with your family. There is something about joining around a good meal.

Awesome! Even without horse radish that’s a great meal!
