Hi guys. New on the forum. I have a cheap MasterForge charcoal grill that I attached a Char Griller side box onto. I don't do a ton of smoking, but I do smoke a turkey every year for Thanksgiving, and they come out pretty well. I get better seals between the side box and grill, and with the grill lid, using graphite infused rock wool woodstove gasket.

Next project - building a 4-probe pit controller - 2 air temp probes, 2 meat probes, fan control, exhaust damper control, with a cell phone app to set controls and provide alerts.

I live just outside Baltimore Maryland, USA. We are blessed to have great local sources for beef, lamb, poultry, and pork - all from farmers I know. And an organic dairy 3 miles from us that cranks out awesome ice cream. So I want to start doing more with the smoker.
