My friend gave me some fresh caught last night tuna steaks, Had to cook some tonight. Here is the recipe link:

Served over Sticky rice with a little soy sauce, and some tasso creamed spinach. Hell of a meal for a Weds, night! So good!

Strained the marinade and warmed that up for a dipping sauce for the tuna...damn good!

I’m confused as to what you guys refer to as sticky rice? For me sticky rice refers to sweet or glutinous rice like Lao sticky rice that is steamed and eaten with your hands. Just curious.

Not a lot of fresh tuna coming out of Lake Champlain, but boy would I hit that meal hard. Beautiful work Keith with both the post and meal.

I cheat by adding 1 tsp. corn starch to 1 cup long grain rice...

Thanks Steve! For me, tuna is best fast seared, cold center. Use to make myself sick eating this back when I would get fresh tuna on the regular from a Friend that was a guide and had a camp next to ours. Clients would fly home and not take any fish home with them...so we'd get a knock on the door-hey, y'all want some tuna? As much as we wanted to take.

Me too! Blackstone weather is coming and this is on the agenda...Looks great Keith. For me it is no pink, fully cooked...it is a texture thing for me. My wife on the other hand, 1/8" of white on each side and almost cold for the rest

Wow those look great! It about time to make more. I dont rinse rice and it comes out sticky like I like it. Just made some yesterday to make some Kanom Krok -Thai Coconut Pancakes today.

Thank you WaterRat. We got a heat wave here in the south. It is nice outside. Wish we had more than about 3 weeks of this weather though. Won't be long before we are back above 90*F...
