Those eggs look amazing. They are now on my list as well. Great little grab and go breakfast option to keep frozen. Has anyone tried these with a sweeter sausage like a maple sausage?
 
Got a small batch ready for smoker tomorrow. If you have a SV unit ,190° for 20 min. Then ice bath . Very easy peeling eggs.

They are totally awesome. Don't really need to change a thing. May drizzle a little maple syrup on a couple just to see. Will "definitely " 20181212_163357.jpg do again. Thanks...
 
They all look delicious. I was given some venison that I plan on smoking this weekend and I may throw a batch of these in as well.
 
Hooked on these eggs now ( thanks crazy:p). Anyhow if a person was to grind a pork butt and season the meat similar to the Jimmy Dean pork sausage, would some type of binder be needed to hold it together? Have never ground straight pork before, always been mixed with venison.
 
Here are 3 versions of copycat Jimmy Dean sausage. I've done the Sage, and Maple. Both turned out great. I will have to say I used more sage than in the recipes. In my opinion homemade sausage is so much better than store bought.
