Made up a batch of Scottish eggs today. Steamed and peeled the eggs with out ruining them.

Mixed up 4 pounds of sausage ,2 regular JD and two pounds hot

Made a small ball of the mixed sausage and then flattened and added an egg

Rolled them into balls and rolled in spicy rub real quick.

Into the smoker with cherry chips for 3 hours at 225*

My "to-do" list just keeps getting longer. Scottish eggs are now on the list.

CM, man that's one dish that keeps slipping my mind when I fire up the smoker. Thanks for reminding me again. Great step-by-step and an even greater final result.

Great looking Scottish Eggs, CM. Beautifully cooked and peeled like I can NEVER manage to do.
I was trying to decide on what to have for breakfast Christmas morning. Thanks for reminding me about these.
I generally dust the egg (rolled in the meat) with flour mixed with salt and pepper, dip in an egg wash, and then flour again. Makes a great coating.

ps--I've frozen them and then reheated in the microwave and they come out great.
