Made up a batch of Scottish eggs today. Steamed and peeled the eggs with out ruining them.

Mixed up 4 pounds of sausage ,2 regular JD and two pounds hot
    P1010091.JPG
Made a small ball of the mixed sausage and then flattened and added an egg

Rolled them into balls and rolled in spicy rub real quick.

All I had today to eat was some animal crackers and Greek yogurt and this pops up. Now I'm really hungry!

Thinking I'll make a batch of theses this weekend.

    Keep up the good work!

SA, I'm sure they would heat up nicely in the oven wrapped in foil. To tell the truth my coworkers and I just eat them cold.

CM, man that's one dish that keeps slipping my mind when I fire up the smoker. Thanks for reminding me again. Great step-by-step and an even greater final result.

    Point for sure.

Those look tasty! @crazymoon have you ever froze them and if you have, do they re-warm nicely? Like those for sure!

Great looking Scottish Eggs, CM. Beautifully cooked and peeled like I can NEVER manage to do.
I was trying to decide on what to have for breakfast Christmas morning. Thanks for reminding me about these.
I generally dust the egg (rolled in the meat) with flour mixed with salt and pepper, dip in an egg wash, and then flour again. Makes a great coating.

ps--I've frozen them and then reheated in the microwave and they come out great.

  20. Peeling the damn eggs is the hardest...nicely done.
