That's one fine looking meatloaf Al. Excellent job sir. Like you, I've been using Italian sausage in meatloaf for a long time. It adds a great dimension to the flavor profile.

Nice looking meatloaf Al! Had to have a ton of flavor. Too bad the gravy didn't turn out. Last meatloaf I did was gonna make a hot beef sandwich with the leftovers, but ran out of meatloaf before we made mashed taters and gravy.

Thank you Ryan, yea we were kind of bummed out with the gravy thing, but it still was the best meatloaf I have ever made! Maybe next time I’ll put more soup or broth in the pan. After all this is a learning process!

Looks tasty!! My wife uses Italian sausage in her meatloaf too. Still the only way the boys would eat it was if I smoked it.

Great recipe.
Been adjusting my in the oven and meat loaf pan recipe to get a better free standing blob for the smoker.
Trying to figure out the reason for adding the onion soup. To me it doesn't add much and dilutes the drippings to screw up a gravy base.

I use sausage in my loave's, too, but haven't taken the extra steps in cooking, that you do. I'll give your method a shot, next time.

Looks really good. I would probably opt for BBQ sauce instead of ketchup but I don't think you could go wrong either way!

I added the onion soup to make more of a base for the gravy. Next time I may add 2 cans, because there was more grease than anything else, so instead of messing with it we just pitched it.

I'll bet that the brisket adds a good bit to it, too.

Yes it does, we use ground brisket for just about everything that calls for ground beef!

I think you Will really like the Hot Italian sausage in the mix, it just adds a different flavor profile than your used to. And we do the same with the poblanos, using them instead of green Peppers, just about all the time.

We just wrapped it up into a log and put in the frigerator.
Yours looks like it stood up on the grill without a pan.
I think mine will droop, not hold up in the heat.
Question. Did you freeze it like Kosmo's Q ( Kosmo's Q BBQ & Grilling) does his meatloaf so it will hold up and not droop down flat?
 
No I did not freeze it but wrapped it very tight in the Saran Wrap. I spun it up like you would a fattie, real tight, then 24 hours in the fridge. It held it’s shape without a pan.
