Inspired by Sven Svensson Sven Svensson and tx smoker tx smoker I got these beef ribs at Costco, all 450lbs of them. I removed the membrane and seasoned both sides with pepper and garlic, no salt. Will smoke with lumberjack mesquite, 40% mesquite and 60% oak.

Question I have is:. I will be out until 3pm watching the Seattle sounders beat Sporting Kansas City, and can't start to cook until then. Can they be probe tender done by 7 or 8 tonight?

However long it takes only means more adult beverages consumed. And yes smokerjim smokerjim there will be some veggies, wife's brother will join me, can't risk it.

Can't wait for the finish! Get ya a bunch of scallions...little salt and dipped in ranch makes for some great munchies while you wait for the beef.

Cool for you!!" If you're running 275-285 they should be done in 5 hours or so...assuming you don't keep opening the door to take pics. One or two pics is required but keep the door shut :emoji_laughing: :emoji_laughing:

Thanks, I'm not a picture guy so that's not going to be a problem, and I'd have to keep putting the beer down.

Here is the result. First not so happy with this smoker. I think it has some real problems syncing between phone app, will get into that with GMG.

The ribs were fantastic, I have to eat them with a fork and knife, although I own my front teeth, I didn't grow this set.

Since the temperature was greater then 150, I used a smoke tube with 2/3 pellets and about 1/3 chips.
