I got these beef ribs at Costco, all 450lbs of them. I removed the membrane and seasoned both sides with pepper and garlic, no salt. Will smoke with lumberjack mesquite, 40% mesquite and 60% oak.
Question I have is:. I will be out until 3pm watching the Seattle sounders beat Sporting Kansas City, and can't start to cook until then. Can they be probe tender done by 7 or 8 tonight?
However long it takes only means more adult beverages consumed. And yes smokerjim there will be some veggies, wife's brother will join me, can't risk it.
