I love my salads but wanting to try something different for dressing. Trying to keep low carb but probably pretty easy to turn regular dressings into low carb.
 
Simple Greek dressing This is a very basic dressing 1/2 cup olive or avocado oil, 1/3 cup red wine vinegar, 1 lemon juiced, 1 tsp dijon mustard, 2 garlic cloves minced, 1/2 tsp oregano, 1/4 tsp salt, 1/4 tsp black pepper.

Dressing along with a refreshing salad - One softball sized jicama cut into matchsticks, about 8 oz. of sliced radishes, one sliced red pepper and some minced fresh cilantro to taste. For the dressing 1/2 cup of avocado oil, 4 tbs white wine vinegar, zest of 2 small limes, 2 tsp chili powder, 1 tsp coriander 1 tsp pink salt. Toss and let it sit for an hour or so for flavors to marry.

Cilantro Lime Vinaigrette 1/2 cup fresh lime juice , 1 cup avocado oil (can use olive) 2T ACV, 2t lime zest, 2t Dijon mustard, 3T Splenda, 2t minced garlic , 4T fresh chopped cilantro, 1t salt and 1/2t pepper.
 
Creamy Eggless Caesar Dressing
2 cloves of garlic minced
1 tsp anchovy paste
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 cup mayo
1/2 cup of freshly grated Parmigiano- Reggiano
1/4 tsp salt
1/4 tsp black pepper you can thin some with cream if you want
 
Here is our family French Dressing, usually sprinkle on a bit of blue chess at the end. Has a bit of sugar but as you said there are ways.... Very bright and enjoyable dressing.

French Dressing
Ingredients:

1 1/2 tsp Sugar
1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp paprika
1/8 tsp garlic powder
2 tsp onion powder
1 1/2 tsp Worcestershire sauce
1/2 cup white vinegar
1/2 cup salad oil
5 oz tomato sauce

Directions:
Add all ingredients into a medium ball jar. Close lid and shake vigorously to dissolve and mix completely.
 
Some nice dressings you got posted there, Jeff! I’ve made the Cesar a few times, it’s fantastic.

I’m mostly an oil/vinegar guy but I really like this one. I’ve made this a lot too.

Thanks gonna try this one with a simple sub for the sugar! I shake a lot of mine in a mason jar instead of whisk. So easy and stores good in the same container!

This is a pretty good recipe for Italian Dressing

1/2 cup extra-virgin olive oil or other oil.
1/4 cup white wine vinegar OR red wine vinegar OR a combo of the two
2 tablespoons water
1 to 2 teaspoons honey
1 teaspoon freshly squeezed lemon juice
3 tablespoons freshly grated Parmesan
3/4 teaspoon garlic salt
3/4 teaspoon dried parsley
3/4 teaspoon dried basil
1/8 teaspoon dried oregano
Pinch of red pepper flakes
Freshly ground black pepper, to taste
 
I have been using this for Ranch Dressing for a while. Still needs a little tweaking but close.

Ranch Dressing​

Ingredients
  • 1 cup mayonnaise​
  • ½ cup sour cream​
  • ½ teaspoon dried chives​
  • ½ teaspoon dried parsley​
  • ½ teaspoon dried dill weed​
  • ¼ teaspoon garlic powder​
  • ¼ teaspoon onion powder​
  • ⅛ teaspoon salt​
  • ⅛ teaspoon ground black pepper​
  • Optional Thin with 2 tablespoons milk​
  • Optional 2 tablespoons lemon juice for tang​

Directions​

Whisk together mayonnaise, sour cream, chives, parsley, dill, garlic powder, onion powder, salt, and pepper in a large bowl until well-combined.

Give it a try and report back with your changes.

Thousand Island Dressing

Ingredients:​

  • 1/2 cup mayonnaise​
  • 2 tablespoons ketchup​
  • 1 tablespoon white vinegar​
  • 2 teaspoons sugar​
  • 2 teaspoons sweet pickle relish​
  • 1 teaspoon finely minced white onion​
  • 1/8 teaspoon salt​
  • dash of black pepper​

This is not bad also in my opinion. I am trying to avoid MSG
 
Similar to Marzetti Coleslaw Sauce
  • 2 cups Mayonnaise​
  • 2⁄3cup Sugar​
  • 1⁄4cup White Distilled Vinegar​
  • 2 Tablespoons Prepared Yellow Mustard​

If you've ever eaten at Babe's Chicken Dinner House, you know their salad dressing is interesting and I love it!

The waitress once told me they make it all in house and it's simply distilled white vinegar, lemon juice, and sugar.

Sub in erythritol or allulose (better for liquids) instead of sugar and you can probably mimic their dressing :)

Keto “Honey” Mustard dressing. I was cleaning out cabinets and found half a jar. Did not look to great so threw it out. Time coming to make more. Going to have to figure out how to do that creamed this time.

I went there once but was to crazy about it. It was after lunch over and seemed like they just gave me the left over stuff. Left most of it on the table. I hear great things so probably just one of those bad days.
