I am wanting to do some queso chicken enchilada's tomorrow. I have that White Queso from Sam's that is quite good. Been looking at recipes and just cant figure out how I want to do them? I will be using HEB low carb tortilla's which are actually pretty good and rotisserie chicken. Use some sour cream? Rotel? Should I add the queso before cooking or just over top on plate when done? Any idea's s or suggestions? I seem to be lost on this one.
