Rub and cover?

I'm new to smoking and found a good deal of info on this site. Here's my question. After applying rub to pork shoulder do you cover and refrigerate over nite or  leave open on a rack? Thanks all.

<I always use Kosher salt on pork because I like the taste of irony> 
 
I usually don't apply dry rub until I'm firing up the smoker. Some rub and wrap tightly in plastic wrap to refrigerate overnight.

I go the other way, I rub it & wrap it in plastic wrap & let it sit in the fridge overnight.

I have a question for you guys who rub and wrap in plastic wrap the night before. The next day when you unwrap doesn't all the rub you applied stick to the plastic wrap when you take it off removing it from the meat? Do you reapply the rub then?

I have used the oven cooking bags in the past for this particularly prime rib. I will season the prime rib and put it in the oven bag along with some quartered onions and garlic heads cut in half.

I make sure there is air in the bag so the aromatics of the onion and garlic can flow around the roast. I pull the roast from the bag the next morning and all the rub has turned to a nice paste and stays on the roast and not on the bag. Give this method a try it works well.
 
Very little rub comes off with saran wrap when i get ready to toss it in the smoker.  I wrap everything the night before and refrigerate.
