Roasted Corn Salsa

Here is a great dish to pair with your wonderful barbeque!

ROASTED CORN SALSA

Ingredients

• 4 Ears Corn
• 2 Tomatoes, Chopped
• 1 Small Red Onion, Chopped
• 1 Red Bell Pepper, Chopped
• 1 Avocado, Diced
• 1 Handful Fresh Cilantro Chopped
• 2 Tbsp Lime Juice (from lime)
• 2 Tsp. Cumin
• 2 Tbsp Olive Oil
• 1 jalapeno pepper Diced
• Cayenne Pepper to taste

It's great and a wonderful change from slaw and beans.

Try it roasting the veggies and without roasting them....good both ways
