Thought I would share this as it was so good. Think @tx smoker would of loved it. If you watching Robert its time to come home:emoji_wink:. I cut the recipe by 1/3. Had a boneless thigh to use so used that. Have one more to use up tonight. Got to love that chamber sealer to seal raw chicken! I added cheese, cilantro, jalapeno, sour cream and avocado on top. Several squeezes of lime. I will be making Jeff's Poblano cheese later this week.

1 tablespoon extra virgin olive oil
1 yellow onion, chopped
3 poblano peppers roasted and skinned
2 cloves garlic, chopped
1 pound boneless skinless chicken breasts or thighs
1 tablespoon spicy taco seasoning - Used Roberts
salt and black pepper
3 cups red enchilada sauce - I used Trader Joe's. Good stuff.
2 cups salsa verde
3 ½ cups broth

It's been getting cold around my parts. Looks like a great soup to warm the innerds, gonna have to give that a try. Thanks for sharing 👍

Thanks Ryan. Here is Jeff recipe. Of coarse his recipes feed the whole neighborhood! I used my recipe manger to break it down.

That looks delicious! Simple also which is my thing. I just made an instant pot green chile soup / stew last week.
