What the difference between ring and regular deli bologna. For those of us who are sausage illiterate.

Chris

Ring bologna is also known as trail bologna and it's origins are here in Ohio. https://troyerstrail.com/ To me, ring bologna is REALLY close in flavor to a good knockwurst but a bit larger in size. That being said, I think there are some variations to the style and Rick is doing a PA Amish take on it here that is more flavorful and spicy. Most folks snack on it with crackers and cheese but I am known to use it like knockers and bake with in kraut.

Thanks Sam, I like knockwurst and kraut. Never had them baked. My mother and grandmother use to cook them on the stove in a pot together using the kraut juice for liquid.

Ring is a smoked meat, small diameter to eat with crackers, cooking or slice for pickling. I'm making PA Dutch style ring, Ohio is prob pretty close.
