Thank you, it's always nice to hear that something I did helped someone else out!Thank you Al, not just for the kind words and point, but for the temp tip on the thread you posted a year ago. My ribs have been so inconsistent, and I had always read you cannot cook ribs to temp. Guess you proved them wrong, and I've verified your research for myself.
These ribs look great! Question: Did you follow Al's recipe all the way and leave the membrane on as well? I'm thinking of smoking a couple racks tomorrow since it's supposed to be 60° in northern IN. I want to try my current method for one rack and Al's method for the second rack.Lol, they have been done, but I chose to enjoy them first and post pics and results later. Here is what I did, flying by the seat of my pants to speed up the cook......2 hours 15 minutes at 250. 45 minutes in foil with butter and brown sugar at an average of 270. Took out of the foil and sauced and left on smoker at 260 for 15 more minutes,
I used some info from a post from Al about a year ago, and cooked these to temp. They were just over 195, and were bite off the bone, but not slide off the bone, which is what I prefer. His temp method works perfect if you haven't tried it. Ok, here are a couple of pics.....

Those ribs look great!! I have been using Al's method for a while because I like bite off and my wife likes fall off. So I take my half rack or rack to 195 and my wife's higher. Al's method has saved my marriage hahahaha
