When I first posted here looking to replace my Masterbuild 560, there was some interest in what I might come up with.
Here is one of my 'signatures'. Fillet, smoked at 225 with hickory until IT is 120, followed by a 15 minute rest while the smoker comes up to 700, and then 90 seconds per side reverse sear. After cooking fillet this way, I don't want it any other way, and my wife and daughter absolutely love it too.
