Worked much better this time. Shortened cooking times by 30 minutes each stage and used a different rub, and didn't put any rub on after foil stage.

To those who wanted more info - glad to share.

Rub - salt, garlic powder, chili powder, a little chipotle powder, cumin, and brown sugar.

Foil mixture - honey, sweet chili sauce, and apple cider vinegar.

Smoked over apple wood.  I did try the last stage with the wood not soaked, seemed to work ok, so I may try that in the future for all stages.

Next time need to try doing something like oil on the ribs before the rub. 

Tasted pretty good.  I need to figure out the best way to potentially get a second coat of rub on the ribs after the foil stage...any suggestions for rubbing it in without burning myself?? I don't just want to sprinkle it on.
