I'm posting this here because I have a Camp Chef which I love, but I'm not crazy about the capacity, particularly when it comes to ribs. I'm likely going to buy a rib rack, but before I do, I want to see what others have done.
A rib rack is for sure an option. Couple other options to ponder is depending on which Camp Chef model ya have, possibly adding a second rack to cook on. Another option is to for a lack of better terms.. roll the ribs up and smoke standing up. Check out BBQ Pit Boys St. Louis standing ribs for an example. They done theirs in a CI pan, but I’d think you can do them directly on the rack too!
