Yes thank you this is great information!! The re-setting of the charge window was a learn and very good to know!
 
Oh was just going to add this tip as well…..

It’s best to place it all the way to the thick black line as the desired line because as the protein shrinks say when wrapped the probe will stay properly placed….

This is after being covered and rested….the chuck pulled away from the thick line down to the minimum line….

Oh and just giving a plug for the graph function……just awesome!!!

I will note that the pull back above happened between the graph shown rise after the initial stall and the second stall at pulled temp….
