180 on the yoder til an it of 123. Taken off to rest for 10 minutes while I removed insert for 2 piece diffuser, added grill grates and cranked up to 600. Seared for 60 seconds on each side. Added a little smoked cheese and tossed on a hot dog bun

That Sammi looks awesome!!  Must have taken a while @ 180 to get the TT to 123*.   Reminder to myself, never reverse sear bacon wrapped pork tenderloins again.  Someone will call the Fire department.  Excellent pics of a very nice smoke !!  Congrats on making the carousel.
 
MMM-mmm.... I have a Tri-Tip on my Oklahoma Joe's off set smoker now, been on just about 2.5 hours.

It is my mother's Birthday tomorrow, and we are having a little Family get together this afternoon. So I am cooking 1 of the dishes.
 
It took just under 3 hours to reach 123, 10 minute rest with a 2 minute sear. What is the carousel?
