So I thawed ground meat to smoke last weekend. Well life got in the way and it didnt happen, but the meat I was afraid wouldnt last a week in the fridge. With the advice of BGKYSmoker BGKYSmoker and crankybuzzard crankybuzzard they said add the cure and vac seal till this weekend. SO that is what I did. So yesterday I stuffed into muslin bags that HalfSmoked HalfSmoked 's wife made for me, 4 inch and 1 inch I think.

Loaded in to my smoker with cob pellets.

Cant see the smoke but its there. And the Fireboard letting me keep track while I do farm stuff.

Took about 10 hours to get to temp. Then hung in my basement till tonight.

Bags peeled right off. Good smoke and great texture.

Broke out some 3/18 pepper jack and some cheap ass beer and that was my supper.

That looks fantastic . Good work with the stuffer , you can see the " swirl " in the slices .
You nailed that .

Thanks Them two boys know their stuff.

I will admit that is something I’ve never done.....however, we do eat lots of dried meat and cheeses. We will do a whole serving plate with 4 or 5 different meats and cheeses and that’s dinner!

Thanks but my plastic geared stuffer is shot now. I am looking for a new one. No more stuffing for now unless I get the Enterprise out.
 
Nice work Adam ! Do you think the smoke penetrates the cloth better than a fibrous casing? And why haven't you been using your Enterprise Stuffer?

We're done until spring for digging. Maintenance starts next year.

Sometimes cheap ass beer is the best companion to a fine simple meal.
(Just wish what I consider CAB wasn't so expensive! I cannot drink the garbage swill.)

Man that looks great! The cut slices look perfect! Nice fat definition. And nothing wrong with that for dinner thats for sure. We had a quick meet and cheese and Busch light dinner tonight actually.....meat and cheese is gone. Still working on the Busch latte's. Lol

We have a beef farm need to feed them and I have a full time job. Come Feb I will have 4 h pigs to raise too.
