So I thawed ground meat to smoke last weekend. Well life got in the way and it didnt happen, but the meat I was afraid wouldnt last a week in the fridge. With the advice of
BGKYSmoker
and
crankybuzzard
they said add the cure and vac seal till this weekend. SO that is what I did. So yesterday I stuffed into muslin bags that
HalfSmoked
's wife made for me, 4 inch and 1 inch I think.
Here its stuffed.
Loaded in to my smoker with cob pellets.
Cant see the smoke but its there. And the Fireboard letting me keep track while I do farm stuff.
Took about 10 hours to get to temp. Then hung in my basement till tonight.
Bags peeled right off. Good smoke and great texture.
Broke out some 3/18 pepper jack and some cheap ass beer and that was my supper.
