We like the way it tastes, but the real test will be later today as we are about to start delivering half chubs to numerous people for their opinion. i just finished cut and wrapping them and got the cooler icing down.
 
Looks very good! Time now for fried bilony (southern slang) bologna sandwiches!
Made a couple out of the leftover stuff in the tube and horn. yummy
 
Looks great, FB! I'm curious about the muslin bags, as I've never seen them before. Are they better than fibrous casings for some reason?

Wow, it turned out great!
I had the same issues with the Cabelas stuff. I have slowly been picking up commercial grade at restaurant auctions.

I ordered some Red Barn from Owens. Gonna do some venison smoked ring sausage soon. Have his Garlic Summer Sausage seasoning. May try that style of bags. Better than the fibrous in your opinion?

I learned of them from our very own smokin peachey smokin peachey , pc farmer pc farmer and HalfSmoked HalfSmoked whose wife, incidentally makes them. It’s the first time I have used them. I liked them a lot.
