I think I might pick up the Lowe's/HD conversion kit and just see if it works. If it doesn't fit...I'll just bring it back.
The reason I'm looking for the NG option isn't really a fear of running out of LP. I already keep two LP tanks on hand for the homebrewing hobby. It's just convenience and economy for me. NG is cheaper, and I already have it plumbed to the patio outside. No insurance or plumber hassles with the hook-up there. Plus having one less appliance running on LP will mean less running out to get the tanks filled. I've already got my gas grill and two turkey fryer for home brewing chewing up the LP. Less hassle of driving around there.
I'm also now shying away from permanently modifiying the orafice for portability reasons. It'll be nice to run the GOSM off of NG at home, but for tailgaiting and camping and such, just take the conversion kit off, put the LP parts back on and she's ready to travel. Course they do make a dual-fuel afterburner kit, with that I wouldn't even have to swap anything out. Hmmmm.
Bottom line, it's a convienence, not a necessity. LP or NG I'm still going to buy a smoker and make some damn fine q. We just poured a new patio last week and it's begging for it!
